Inspired by the goodness of the grain bowl dishes at Café Gratitude, (I am still grateful for the sushi rice bowl I had there weeks ago) I cooked up some Green Bamboo Rice (it’s white rice infused with bamboo juice) and added a bunch of different items that I happened to have in my refrigerator. Mine isn’t vegan as I like a little protein at lunch. A different day and a different set of leftovers would have yielded an entirely different lunch. I also prefer a heartier whole grain rice, like red or brown rice, but the bamboo rice is sure pretty and it has a green-tea like aroma and flavor.
2 small roasted golden beets, quartered
A few leaves of bok choy sautéed with ginger and garlic
Oyster mushrooms sautéed with green onions
Maybe 3/4 of an ounce of smoked mackerel
A few drops of sesame oil
