Salad Rolls: A cool lunch for a hot day

After a hot and sweaty bike ride to and from the farmers’ market, something cool and crisp was in order. These were surprisingly good considering they were completely unplanned. The ingredients were a combination of leftovers from last night’s dinner and new purchases from the market.

The Ingredients:
Rice paper wrapper soaked for 30 seconds
Lettuce leaves
Julienned jicama, green papaya, green mango, and cucumber from last night’s Indonesian salad
Cilantro and mint from the fridge
Daikon sprouts from the market today
Sesame Tofu Strips from Hodo Soy Beanery bought at the market today)
Chopped peanuts from last night’s salad
Tamarind, shrimp paste, chili dressing from last night
Ginger dipping sauce from last night

When I think about all the different kinds of leftovers that could go into these rolls, I have a feeling I’m going to be making them a lot this summer.
